Avocado Smoothie

i. love. avocados.  But they are so hard to catch at their peak.  They are unripe for days and then all of a sudden they are overripe and not at all tasty.  What to do?

I hate to throw food out.  I tell B when he won't eat that some children don't get the chance that he does and here I am throwing out produce because I missed the expiration.  I have promised myself many times that I'll remember when I buy something and use it so I was so mad at myself when my last purchase of avocados were done.

Pinterest to the rescue!  What to do with overripe avocados??  Why of course, make a smoothie.

I have been letting some bananas get too ripe, on purpose, so that I can freeze them to use in smoothies.  The riper the better for bananas.  I had everything else on hand so it was a simple mix to redeem myself.  I found this recipe on Happiness is Homemade, I used almond milk and mine didn't need any honey.

  • 3 tbsp milk (can also substitute soy milk, almond milk, etc.)
  • 1/2 fresh avocado
  • 1 small frozen banana
  • 4 oz. vanilla Greek yogurt
  • 2 tbsp Dutch process cocoa powder
  • squirt of honey to taste for additional sweetness

Notice how my straw matches my nails??  Didn't do that on purpose either, I'm just that good.

Cheers to redeeming yourself and matching nails to outfits.  Or straws.
